Vodka Chicken Parm

Ingredients

2 x butterflied chicken breasts 
2 cups panko 
1 cup mozzarella cheese
1 tbsp dried oregano
¼ tsp salt
¼ tsp white pepper
2 eggs
2 tbsp Yo Mama’s Vodka sauce
2 tsp fresh basil

Instructions

In a large bowl, combine the panko, ½ cup mozzarella cheese, organo, salt and white pepper. Mix until combined
In a separate bowl, beat 2 eggs until the yolk and whites have combined 
Pour the egg mixture into the chicken and coat the chicken evenly in the egg
Place each breast into the panko mixture and generously coat chicken on both sides
Place coated filets on a baking tray 
Bake at 400F for 20 minutes 
Out of the oven, place 2 tbsp Yo Mama’s Vodka sauce on each filet and spread evenly 
Top each filet with ¼ cup mozzarella cheese 
Broil the chicken in the oven for 5 minutes or until the cheese is melted and slightly becomes golden 
Garnish with fresh basil and enjoy!
