Four Cheese Chicken Parm

Ingredients

4-6 thinly sliced chicken breasts (2-3 regular breasts sliced in half to create 4-6 thin slices)

1.5 cups all-purpose flour

2 eggs, beaten

1 ½ cups breadcrumbs

1/4 cup finely grated parmesan cheese

2 tablespoons Italian seasoning blend

1 tablespoon salt

1 teaspoon pepper

2 cups vegetable oil, for frying

2 cups Yo Mama Four Cheese Sauce

4 ounces fresh mozzarella, sliced

Fresh basil leaves, for garnish

Instructions

  1. Preheat the oven to 375°F.
  2. Place the flour in a medium bowl. Place the eggs in a second medium bowl. In a third medium bowl whisk together the breadcrumbs, parmesan, Italian seasoning, salt, and pepper.
  3. Dredge each piece of chicken in the flour, then the egg mixture, then the breadcrumb mixture.
  4. Heat the oil in a deep skillet or pot to 350°F. Fry the chicken pieces 2 at a time for 3-4 minutes per side, until golden brown. Set aside on a paper towel lined plate to drain.
  5. Place the chicken on a baking sheet. Spread 3-4 tablespoons of Four Cheese Sauce on each piece, then place the mozzarella cheese on top.
  6. Bake for 15-20 minutes, until the cheese is melted.
  7. Serve with a garnish of fresh basil.
