Four Cheese Chicken Parm
Ingredients
4-6 thinly sliced chicken breasts (2-3 regular breasts sliced in half to create 4-6 thin slices)
1.5 cups all-purpose flour
2 eggs, beaten
1 ½ cups breadcrumbs
1/4 cup finely grated parmesan cheese
2 tablespoons Italian seasoning blend
1 tablespoon salt
1 teaspoon pepper
2 cups vegetable oil, for frying
2 cups Yo Mama Four Cheese Sauce
4 ounces fresh mozzarella, sliced
Fresh basil leaves, for garnish
Instructions
- Preheat the oven to 375°F.
- Place the flour in a medium bowl. Place the eggs in a second medium bowl. In a third medium bowl whisk together the breadcrumbs, parmesan, Italian seasoning, salt, and pepper.
- Dredge each piece of chicken in the flour, then the egg mixture, then the breadcrumb mixture.
- Heat the oil in a deep skillet or pot to 350°F. Fry the chicken pieces 2 at a time for 3-4 minutes per side, until golden brown. Set aside on a paper towel lined plate to drain.
- Place the chicken on a baking sheet. Spread 3-4 tablespoons of Four Cheese Sauce on each piece, then place the mozzarella cheese on top.
- Bake for 15-20 minutes, until the cheese is melted.
- Serve with a garnish of fresh basil.
